Blaine resident Katie Holub recently won the Blaine Chamber of Commerce’s annual holiday cookie contest for her “Cranberry Almond Cookie Bars.”
Holub is an employee of Big Al’s Diner and the daughter of owner Al Holub. Her cookies will be for sale at Seaside Bakery Cafe.
“Cranberry Almond Cookie Bars”
1 ¾ cups sugar 2 large eggs 1 stick unsalted butter, melted and cooled 1 tsp. almond extract 1 ½ cups flour 2 cups fresh or frozen cranberries ½ cup chopped walnuts
Preheat oven to 350. Grease and flour a 10-inch square pan with butter. In a separate bowl, beat sugar and eggs with an electric mixer until slightly thickened. Add butter and almond extract. Add flour. Stir in cranberries and walnuts. Bake 55 to 60 minutes. Let cool and cut into one-inch squares.
